I have always loved these cookies. My dad was the cookie baker in my house growing up and I loved when he would make this recipe, which comes from my grandma.
They are cakey in texture and as Dan says they are like banana bread in a cookie.
The recipe makes a lot of cookies. I halved it because I only had 2 ripe bananas and it make 3 and a half dozen.
Banana Nugget Cookies (aka Banana Bread Cookies)
Adapted from a family recipe
1 cup brown sugar
1 cup sugar
1 1/2 cups butter
2 cups mashed bananas
1/2 teaspoon nutmeg
1 1/2 teaspoons cinnamon
2 teaspoons salt
1 teaspoon baking soda
3 cups sifted flour
3 1/2 cups oats
1 12 oz. package chocolate chips
Preheat oven to 400 degrees. Beat sugars and butter together until blended. Mix in eggs. Add bananas and mix well. Add nutmeg, cinnamon, salt and baking soda and mix well. Add sifted flour a cup at a time and mix well. Add oats a cup or so at a time and mix well. Mix in chocolate chips. Drop by spoonfuls onto ungreased cookie sheet. Bake for 10-12 minutes. They should begin to brown around the edge, but may look like they are not done on top. Again, this makes a lot of cookies so the recipe can be cut in half.
