I had two overripe bananas that I had to use and I’ve been trying to be extra healthy recently so I decided to make banana muffins with whole wheat flower. They are dense and hearty but surprisingly sweet enough and tasty.
Whole Wheat Banana Muffins
makes 12 muffins
1 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup mashed over-ripe bananas (about 2-3 bananas)
1/2 cup honey
1/3 cup unsweetened applesauce
1/4 cup hot water
Preheat oven to 325 degrees and grease or line muffin pan.
Mix your dry ingredients together thoroughly. In a separate bowl, beat together the honey and applesauce. Beat in bananas. Add egg and beat well. Add dry ingredients, alternating with hot water until combined.
Spoon into prepared muffin pans and bake 18 to 20 minutes.
